I Have A Weber Kettle And I Want To Grill Some Thick Steaks,direct High Heat?lid On Or Off? Help?
Steaks at room temp before starting.
Season them well
Direct heat no cover
turn 180 deg after 3 min
in another 3 min flip over
after 3 min turn 180 deg
remove from heat in 3 min.
This gives them nice diamond grill pattern and MED steaks.
(Vary time to your taste. )

you dont want your temp too high, because it will burn the outside fast before the inside has had even a chance to start cooking. A good temp is 350-400 that is the grilling temps. You want to place your meats on the grill for about 3 mins on each side to give them a quick sear to lock in the juices and the flavor. Then depending on thinkness..say 1 1/2 to 2″ steaks, just time them and do 5 mins on each side, then another 4 mins on each side, then you may want to check them and by that time you are ready to estimate how well cook you want them. Remeber you can use your hand to determine the readiness..look at your left hand..right below your thumb, where the hand kind of pops out, if you push down thats how you know the steak is at rare, if it feels the same way on the steak. The at the center of your hand is how a medium steak will feel. Then right below your pinky finger is how a well done steak will feel.
It depends on how you like your steak. I prefer mine medium rare, so when I grill, I start right over the flame for a quick sear. As soon as I can flip the meat without tearing it because it is sticking, I flip it over for a good sear on the other side. Then, move it off the direct flame when it no longer sticks for a few minutes more on either side with the lid closed.
PLEASE do not use a fork to flip. Use a pair of tongs, otherwise, you lose the juices!
Lid off, but just be careful you don’t burn them. They will be rare, so if you want them cooked a little more, have a lower heat.
Lid off or open…sear meat both sides, then close and allow to finish cooking to desired doneness.
Lid closed. You’ll get better flavor, and more heat penetration. As said before, Tongs only!
on or off won’t matter…you are grilling, not smoking or slow cooking.
