		<description>It depends on how you like your steak. I prefer mine medium rare, so when I grill, I start right over the flame for a quick sear. As soon as I can flip the meat without tearing it because it is sticking, I flip  it over for a good sear on the other side. Then, move it off the direct flame when it no longer sticks for a few minutes more on either side with the lid closed.
PLEASE do not use a fork to flip. Use a pair of tongs, otherwise, you lose the juices!</description>

As soon as I can flip the meat without tearing it because it is sticking, I flip  it over for a good sear on the other side. Then, move it off the direct flame when it no longer sticks for a few minutes more on either side with the lid closed.<br />

You want to place your meats on the grill for about 3 mins on each side to give them a quick sear to lock in the juices and the flavor.  Then depending on thinkness..say 1 1/2 to 2" steaks, just time them and do 5 mins on each side, then another 4 mins on each side, then you may want to check them and by that time you are ready to estimate how well cook you want them.  Remeber you can use your hand to determine the readiness..look at your left hand..right below your thumb, where the hand kind of pops out, if you push down thats how you know the steak is at rare, if it feels the same way on the steak.  The at the center of your hand is how a medium steak will feel.  Then right below your pinky finger is how a well done steak will feel.</description>
